A Mexican celebratory dish!
In this cooking workshop we will make a Chicken Mole, part of a family of dishes made in the South region of Mexico. The recipes always include a blend of many ingredients (dried chiles, fruits, spices and seasonings) that gives the sauce a complex and deep flavor. This recipe, inspired by my obsession with Puebla and Oaxaca cuisines, echoes that complexity without being too complicated to make at home any given day. Mole is usually served with turkey or chicken but can also be offered with vegetables and many other proteins.
