We will start by making a pumpkin filling using an atole technique and then we'll proceed to mix our pumpkin spice tamales batter. Fill the corn husks with these two, steam them and you'll open the pot to the ancient, earthy taste of nixtamalized corn, the aroma of butter, and a delicious, soft cake-like crumb.
