There's many reasons this one is so popular everywhere: it's light, fresh and delicious. It's also the perfect ending to a spicy meal—hence Mexico's love affair with it. My version includes a cream cheese mousse as the icing that is super easy to make and also one of my student's favorites to cover all kinds of cakes. (I serve it often as a dessert in itself. 🙃)
We will make everything from scratch: the sponge base, the Tres Leches mixture, the icing. Top it all off with your favorite fresh fruit and you got yourself a celebration out of any given day.
